Been gleaming lots of great info from you folks for awhile and just wanted to sign in and say hello and thank you. I've got a MES 30 that I have been using for pork butts (we do a lot of that around here) but you guys have got me wanting to try new stuff. Last weekend I did my first turkey and it came out so pretty  that she who must be obeyed said I should take a picture and post it here. And I will if I can figure out how to.  thanks again

teeznuts,My only cooking rule is never make something for company that you have not made before. This was my 1st test bird before the hordes invade my house for Thanksgiving. My only advice would be to ask these guys that have been smoking a lot longer than I have. The amount of freely giving help and info on here is really amazing.
