I'm John. After years trying to do great ribs on the grill with ok results and inspiration from BBQ Pitmasters, I got interested in smokers. I wanted one large enough to cook for the large family gatherings of 30-40 people, plus convinient to use regularly without forking out a grand. I liked at lots of verticle smokers and up with the GOSM propane version, because I can put a full slap of ribs in it, feed the group and the convinience of gas. The others verticles were too small to do that.
I've had it for 3 weeks now, and have cooked each weekend. First was chicken and ribs. Came out great but over cooked the chicken a bit and under cooked the ribs a bit. Chicken fell apart and off the bones while the ribs were a touch chewy.
The following weekend was brisket. I ended up cutting it 1/2 and cooked the 7 lb flat end. Came out incrediable. Best I've ever had.
This weekend was 12 lbs of bone in pork loin. Again just amazing.
Its great finding a place that has a wealth of information. I've scanned here and some of the referring sites for the recipes and ideas, and look to learn more.
