Hey everyone, I just joined the group and wanted to introduce myself real quick. My name is Scott and I live in Jacksonville, Florida with my wife and 3 children. I've used smokers for a few years now and currently am using a Great Outdoors Smoky Mountain propane smoker, so far I'm happy with it but will one day upgrade to something nicer. I'm not great at this smoking meat thing but I can produce some pretty decent meals so I'm looking forward to gaining some knowledge from the site so I appreciate everyone who came before me and has shared their knowledge and experience on this site.
 
Hello and Welcome to our addiction.  Many good folk here with a load of experience that they are more than willing to share.  If you have specific questions just start a thread and someone with experience will be along soon to offer advice.  All info you can provide us with such as smoker type, location and so on will help us answer any questions you may have, and pictures help a bunch.  Spend some time doing some research on the forums, tons of advice and recipes already available there.  Check out Jeff’s 5 day smoking E-Course ( link below ) that will help you get started.  We look forward to your contributions.  Have fun.  Good luck.  Keep Smokin!

I just joined yesterday. I have a 1/2 brother living there in Jacksonville. You might try some wings in your smoker. They are small, and normally are done (165 F.) in about 20-30 minutes. I cut them into separate parts so that they cook quicker, eat easily, and absorb smoke well. For the chicken, I still use an instant read thermometer--I really do not like surprises!--under-cooked chicken, Ugh! Your acid test is: IF the kids eat 'em, you are IN! My problem is my dog.

He will eat anything spelled: h-u-m-a-n  f-o-o-d !! He gits all the gristle and skin tidbits--but certainly not the bones! 

Another  "Quickie" is drumsticks. They will take longer--about 40+ minutes if you set your temp control up to 225 F. I really like the finger-foods since they are small, quick to handle, and popular for most occasions. Another advantage to quickies is that families like mine, where nobody had time to eat a "sit-down-meal" during the week, can eat a quick "to-go" menu without much fuss. --Bill
