Stumbled across your great little community of cooking friends here a few weeks ago, and have been hooked ever since! Been smoking foods for quite some time now in an old bar b chef side box, and a new braunfels el dorado. Just purchased a new traeger from our now closing sportsmans wearhouse for a great price. Allready done babybacks, pork loin, and brisket in it, venturing into the fattie tonight for the first time. Never heard of a fattie untill I read about it here. Great forums here, definatly found my new internet home!!!!

Must be nice to be in a place like Nevada where you can smoke year round, cept for the rainy season ( I used to live in AZ).
Wish you the best of luck on smoking your first fattie, one of the greatest things every created. Hope to see some pics of your results.

Welcome to SMF, jagerviking, and congrats on the new Traeger. You live in one of my favorite places. A couple of buddies and I make a pilgramage to your fair city every year for golf and gambling.

Thank you all for the warm welcome!! I have to be honest, I feel as if I am cheating every time I fire up the traeger!! I have been using my old side box for SOOO LONG. It is however very nice not staying up for 18 to 20 hours doing shoulders and briskets!!!
 
Welcome aboard, I love Vegas. How long does the shoulders take? I am supposed to receive my Traeger today, getting late now so I am getting nervous.
 
Have not done shoulders on the traeger yet, just done 4 fatties, 6 slabs of babybacks, 4 whole chickens, 4 pork loins and a brisket. So far everything that comes off of it is very good. In my old sidebox, shoulders were usualy 14 to 16 hours of cooking. The brisket I did on the traeger was on for 16 hours, it was a 13 pounder, no foil.
 
is that the 225 controller or the 180 and how do you like it?
 
its the controller that starts at smoke (180-190) and goes up to 425. I love it. 225 setting gives off alot of smoke!
