My name is Jason and I am faily new to smoking.  I live about as far in the middle of nowhere as you can get in East Kentucky but I wouldn't have it any other way as I am as country as cornbread as they say.  I bought a Master Forge vertical gas smoker two years ago and smoked quite a bit that summer.  Last summer I didn't do as much as I became an avid fan of dirt track racing.  May actually combine the two this year.

I received a CharGriller with the gas and charcoal combination for Christmas.  My wifey is the greatest.  I am going to buy the side fire box but have never smoked with charcoal before.  Do you think I should wait for it to warm up before I try my first smoke with charcoal?  I have smoked with my gas before in the winter and didn't have any problems but from what I have read on here charcoal is an entirely different animal.

Also I drew an archery cow elk tag here in KY.  No luck yet but I was thinking if I did happen to take one I would save one of the front legs for smoking.  Anyone ever tried smoking an elk shoulder?

Welcome to SMF Jason, Charcoal will work fine when it's cold, just may have to add a little extra.

Never tried the smoking Elk thing, but if one makes it to Florida I'll be all over it

Charcoal will work in cold no problem you just use a bit more. I run a Gasser at home and a WSM at the lake. Good luck on your Elk hunt

First off welcome to SMF there Jason. You'll really like this place for there are a bunch of really good folks here that would just love to help you with just about anything to do with smoking meat. Then if you have any questions you just post them here or yu can try in chat for a faster answer. If you are really new to all of this I would recommend that you look up and take the e-course. It is free and it will also give you the basics on smoking. So with all that said now go and get something to smoke.
