As a keen observer to the word of smoke, I will follow on from my previous endeavours in the world of wood fired ovens & hope to turn my attention to either building my own reverse flow offset smoker or purchase one, The smoker trend is picking up over here & I need to give it a crack

I had a ball building my own wood fired pizza oven and creating some terrific offerings & continue to use & experiment with it

However I have caught the smoker bug and it won't let go

I am looking around at materials over here & have some mates with the welding gift & would like to try my own hand, willl see how this evolves

Meanwhile, I love your site and all the questions, answers & images of what you are creating and look forward to many more

With any luck, I can be a worthwile contributor to your forum down the track

Hi Phil, you seem to have taken a similar path to me in the world of smoking. I started off with a wood fired pizza oven too after I picked up Kiko Denzer's book, then I found this site and had a meet up with some others from here during our summer. Working on an UDS at the moment. Just as an aside, I recently got back from a trip to Europe in our camper van and discovered a dish called flammkuchen in Heidelberg, its like a pizza but made on pastry not dough and there's no tomato sauce just cream then onions and bacon, gotta be worth a try.

Phil,
Welcome, from southern Ohio, to the best forum on the internet if you are looking to learn how to BBQ/smoke/brine/cure/inject. Well you get the picture if you can do it to something you put on a plate to eat then someone here has probably done it. Use the search bar at the top of the page and you will be led to the answer to most every question you can think of. If you don't find the answer there then just post it and someone will chime in with there opinion on the subject.
If you do decide to build a offset or reverse flow smoker be sure to chek in with the builders section of the forum, lots of very good advice and info there! Do this prior to putting torch to metal because it will save you time and heartache down the track.

Welcome.I went the wood fired oven route first then cursed myself for not making it a combined oven & smoker.

So then I bought an MES & joined up here.

I have learnt a lot from some very clever people that contribute here.

There are some absolute artists in the build section if you are going to fabricate your own.


Thats my oven ,internal 1m x 1.2m .

Its from plans/book by the late Alan Scott.

I will be firing it up again soon.

Yes I agree, measure it twice, cut it once, preferrably measure it 5 times & cut once. I want to be sure especially working with metal, you can't change a mistake & have it look good

I need about another 150 fire bricks & I can build another one at the weekender. I have scrounged the rest of the materials.I will do it differently next time.
I can't weld but I love the repurposing conversions that the metal guys show case here. Some great skills on show.
I assume you know Misty Gulley for cures , smoking pellets & AMZPS . They also sold me my MES.
 
No, don't know those guy's, dealt with suppliers down here for all my materials for oven, just getting started on the smoking game, hope to build my own smoker if I can get out of it cheap enough, I want it to look good, have looked at many types & have a few ideas

I reckon I can build a decent reverse flow at a size I want for under $2,000.00 including mates rates labour, however if I am unable to build to what I want, then I will purchase, but there is no fun in that

Its fun learning, building testing & doing

Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions
Post it and you will probably get 10 replies with 11 different answers. That is
because their are so many different ways to make great Q...
