I hope I'm doing this right if not I'm sure someone will tell me so.

I'm a newbie to the forum and I hail from the land down under, no not New Zealand but AUSTRALIA.

I am also new to smoking and grilling which is the reason I searched and found you guys so as to get help when ever I manage to get lost.

After a quick scan of the site I'm sure I found exactly what I was looking for so all I have to do now is learn from you guys.

I have a model 2828 char griller at the moment (brand new) and have just seasoned it over the past two days, can't wait to offer up some burnt offerings to the Gods.

About me, I'm a retired railway man aged 62 and I love cooking.

Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions
Post it and you will probably get 10 replies with 11 different answers. That is
because their are so many different ways to make great Q...
