Hello everyone,

My name is JR. I'm new to smoking. I have a Char-Broil 430 offset smoker. I have smoked 2 weekends in a row now. Pork butt the first weekend that came out ok. Family thought it was great, but I saw room for improvement. Last weekend did spare ribs with the 3-2-1 method and they came out perfect. Going to try chicken and maybe some ABT's this weekend. Looking for any advice I can get. Thanks.
 
Hey JR. Welcome to SMF, this sight is awesome, I am a long time cook, but a rookie smoker and there is a wealth of great info. and great teachers on this sight. When I do my ABT's I tuck a piece of fresh pineapple in with them, we like it around here. The other advice I would give is to start charging a cover at the door to help cover the cost, of all the great food. On a personal side note I miss scrapple, and thrashers french fries from O.C. First like me tell you welcome. Kinda late now but there will most decisively be some smoke Guru's around soon or on the 'morrow to properly introduce you and show ya around.

I have gotta tell you, I started laughing when I read your post, LOL..... you definitely belong here, its your home that you didn't realize you had. Three smokes in three weeks, friends loved it but I thought I could do better, LOL Yeppers you belong. Its an addiction.

Lets see, the search engine to cram packed with info about everything, good solid tried and true info. that gets way too specific to its answers. Guru's are always cruising around and helping explain or just visiting about this or that. Well not so much in the middle of a weekday night. But normally! The people are totally awesome, everyone contributes, everyone shares, none of that competition whispering around here although there are quite a few competitors present. Everyone seems to inspire others to greater deeds of smoke, then they want pictures, not so much to critique but to see if they need to attempt the same adventure.

But before I get all carried away, this is the hello area, so I will say howdee. Just a suggestion in parting that a wise Guru passed to me. Get a notebook, a cardex, a journal, a flash drive and record your smokes so that you know what you did, why, what you didn't like, what to research or talk to a Guru about, and how you'll attempt it the next time. That way you'll know where you are going and where you've been. It would be terrible to get lucky and do the perfect smoke as a beginning smoker and not know how to achieve its glory again, right?

I'm usually around if I can help you, remember don't get too caught up in it, smoking is about relaxation not stress cooking.

Have fun and enjoy the smoke.
