Hello, I am from chicago and new to smoking. After reading posts, today was my first day running the smoker. I sprayed the inside down and ran smoke to "break it in" Most notably, it was difficult to gain temp (around 200) but then i stuck a good thermometer in there and i was actually at 240-250 so that was refreshing. I look forward to reading everyone's posts and learning. My first actual smoke will be a couple of whole chickens.
