HI guys. Just got my first electric smoker for Christmas. It's 30" chip smoker. Did some Jerky gun hickory smoked Jerky the other day. Flavour turned out awesome but I dried it a little too long. Next time 6 hours not 8. Currently have two maple brined whole mallards on the rack with Apple smoke going. Will see how that turns out. Should be a great resource for me thanks in advance for all the help I'll get.
