Am brand new to smoking have very little knowledge except that I love the food that comes out of it!, so I bought an electric master built . Live in Ontario Canada. Just a little unsure about the water tray and "mopping"  but from what I have read so far with an electric smoker both are a no? Suggestions?

First off welcome to SMF. You'll really like this place for there are a bunch of really good folks here that would just love to help you with just about anything to do with smoking meat. Then if you have any questions you just post them here or yu can try in chat for a faster answer. If you are really new to all of this I would recommend that you look up and take the e-course. It is free and it will also give you the basics on smoking. So with all that said now go and get something to smoke.

You need to keep the water pan in the smoker, but you don't have to put anything in it.

Whether you do or don't is a personal preference.

As for mopping or spraying the meat, that is a personal preference as well. It doesn't matter what kind of smoker you have .

to SMF - Like Al said, mopping is a personal preference. I would try cooking the item split in half and mop one and not the other and see what you like

As said before, mopping is not a problem.  However, every time you open a door or a lid, you do add time to the cook.
