Hi guys,I'm Stuart and I'm 25 from Aberdeen in Scotland! I'm new to smoking, but I think 99.9% of Scotland are new to smoking. In fact, only 0.1% have probably ever heard about it! Smoking in climates like this does pose a number of problems (it seldom gets above 65 in Summer and can reach 14 easily in Winter), but hey, I like a challenge!!I have a Bradley Digital 4-rack Smoker and so far; I have successfully managed to smoke Salmon, Rainbow Trout, and numerous racks of baby back ribs! I've done a pork butt for making pulled pork but that wasn't as successful - that was my first ever smoke and I committed the cardinal sin of turning the heat up, among other things! It ended up nice but I smoked it for the full 10 hours without foiling and I think I grossly over-smoked it (if that's possible). I didn't rest it long enough either so it ended up not very pullable. Anyway, I learn from my mistakes and I won't do that again! I am determined to make a good go of it next time.Anyway - I digress - Hope to learn a lot of new things by being here and looking forward to speaking to other like-minded people. I love low and slow bbq!Stu!
 
Welcome to the SMF Family...You just made the best move toward learning our Art that you could. You have a Great Smoker although I hope getting Pucks are not too much of a PITA or too expensive.
