just bought my first smoker...a Cabela's 7 in 1 (built by Masterbuilt). I seasoned it per instructions them tried to regulate temp down. I got it down to 200, luckily there was no wind last night cause the flame would have blown out. I will probably try it with charcoal as I want to be able to do jerky down to 140*f.
I am new to smoking so I will likely have lots of questions. Like are there any good mods to lower the temp. I don't think the 8 1/8" holes would be enough. Should I mod the wood pan with air holes for charcoal? It has vents in the bottom of it.
I hale from the Saskatchewan/Alberta border in a town called Blackfoot AB. It will be easier in the cold months to bring temps down up here...say-40*.
