Greetings all,

My name is Jamie and I'm currently residing in south central Montana. I'm new to smoking, but love to grill. I started getting into grilling with a Vermont Castings LP grill several years ago, and last year treated myself to a Weber EP-320. However, as all of you know, a gas grill just doesn't cut it for smoking.

After talking with co-workers, friends, and anyone I could find, it was recommended that I purchase a Traeger grill/smoker. I know there are much better units and brands out there, but I decided to go with a Traeger Lil Tex in November. I added the digital thermostat for more accurate temperatures, and just ordered a second rack that is elevated above the main cooking surface.

I've made a few batches of jerky (beef & venison), a couple smoked salmon filets, and a tri-tip roast with a side of smoked twice-baked potatoes. I have not perfected any of this by any stretch of the imagination, and I decided to join the forums to make me a better cook and pick up a few things from the rest of you fellas.

I'm going to tackle some ribs tonight, and a small pork shoulder on Monday just to try things out.

Glad to have you along. Always nice to have a few more Montanans around here, a few but not many on. Where in the state you from? You'll find lots of good information and folks willing to share it here. Don't know much about Traegers myself, but have a buddy that has one and he has turned out some pretty good ribs and turkeys on his.

How to post Qview to Forum:

When you uploading to Photobucket I always use the Large IMG setting, 640 x 480 it is a nice size...

Everyone here enjoys seeing the Qview so be sure to post plenty of pics...

Large ones that us old people with bad eyes can see.

First off welcome Jamie to SMF. You'll like it here cause there are abunch of good folks here that would just love to help you out with just about anything to do with smoking. We really like to have newbies here because they can bring in a new propective to how things are done. There's nothing like a new set of eyes to give and new way to make things that little differant to make things alittle better. So I hope you know about the Qview here.

It's also free and it will give you the basics of smoking. So after all of that you just need to go grab something to smoke and if you have any question just post them here and we will answer it quickly so you don't have any mishaps with your smoke.
