Greetings all, My name is Jamie and I'm currently residing in south central Montana. I'm new to smoking, but love to grill. I started getting into grilling with a Vermont Castings LP grill several years ago, and last year treated myself to a Weber EP-320. However, as all of you know, a gas grill just doesn't cut it for smoking. After talking with co-workers, friends, and anyone I could find, it was recommended that I purchase a Traeger grill/smoker. I know there are much better units and brands out there, but I decided to go with a Traeger Lil Tex in November. I added the digital thermostat for more accurate temperatures, and just ordered a second rack that is elevated above the main cooking surface. I've made a few batches of jerky (beef & venison), a couple smoked salmon filets, and a tri-tip roast with a side of smoked twice-baked potatoes. I have not perfected any of this by any stretch of the imagination, and I decided to join the forums to make me a better cook and pick up a few things from the rest of you fellas. I'm going to tackle some ribs tonight, and a small pork shoulder on Monday just to try things out.
