Hey everyone.. Came across this site when I was trawling for brines for making mini hams for christmas.

You guys (in the usa) have it all over us in the meat smoking department, we dont have that massive culture of it here. And Ive never even eaten turkey in my life ha. Luckily there's forums like these. 

I bought a standard gas smoker about 18 months ago and ordered a smokedaddy cold smoke generator from the states and since then there's hardly a few days go by that i don't make my own sausages, smoked and fresh, bacon, jerky, smoked chicken drums and breasts. I get more successes than failures these days, but I can still sure make smoked sausage that even my dogs think twice about before they growl it down.  I drool at the range of smokers you fellas have in the States. We basically only have a choice of three electric smokers all with their own draw backs (we cant even get the Masterbuilt 40 inch here, soon as one comes in the country its snaffled up and they sell for about US$ 600)

Ive been self taught and everything Ive learned is off the net. I live in a rural part of the country and even still don't know anyone who smokes meat. So, if I ask questions that seem basic then bear with me.

Other things I'm keen on are salami production (Im building a temperature and humidity regulated space....its the sub tropics here and salami production weather is only here for about 5 weeks a year). Keen to get my shotgun and rifle off the target range and get some free range food. Hunting culture is not viewed favourably in this country.  Also keen to eventually deep fry a whole turkey.....food production that can burn your whole house down and put the lives of your family at risk??? Man, thats serious.

Ok guys, looking forward to going through past posts and threads and eventually posting photos of how things are turning out for me, and say gday to some other aussies on here I hope.. Seems like a real friendly forum. Might even get to the usa so I can bring back some of my own equipment one day so might get to share a beer or two with some of you fellas over some great smoked meat..and get to an American Football game so I can finally figure out what is actually going on???!! ha.

Welcome to the forum.  Lots of great info here and the people are always ready to help.  Ask what ever question you have and you will get at least 10 different answers--and they will ALL be right.  Question for you.  How can a country that has a bounty on rabbits look down on hunting??  I live out in the bush too and my wife and I never go out walking the dogs without our shotguns
