I have owned a smoker for a couple of years, doing mainly ribs and Iowa chops. I have also done a couple of butterflyed pork loin, a ham, and a brisquit. I have been using a brinkman water smoker for the most part, that I converted to use either electric or charcoal. I just built a propane smoker out of an old freezer that I found on the land that I hunt on. I am still messing with it trying to get the proper burner for it. My first one heats it way to high.

Looking forward to trying my hand at making summer sausage and brats out of venison later this winter. So I might be picking your brains some in the near future.

several of us here are from Iowa
several folks here have turned fridge/freezers into smokers.......and there are several options to get your temps down.........stick around.......some one will be along soon to help out

plenty of us live by "Kill it and Grill it", but i do more of the waterfowl.

I live near norwalk, south of Des Moines.

I used to hunt alot for ducks and geese when I rented a pond up near sweats marsh but when I moved to Des Moines, I lost my spot to hunt.
That and my huntin partner is getting a little old and he can't retrieve the ducks like he used to. Just wasn't the same without him along.

So I switched to deer hunting picked up bow and the muzzleloader and now I have a new passion.

Might pick up duck hunting again in the future but the areas around here don't seem near as hospitible to the walkin hunter. Although the geese are real plentiful.

Welcome to SMF !!!

I have converted a few units like you are into smokers. I have found if you can not get the temp low enough to add a regulator to the propane line so less controlable fuel is at the burner.

There are quite a few of us sausage makers here, so when you do have questions, just ask and you will get good answers fairly quickly.

One burner option you might try is the burner from a hot water heater.
I've used them in the past for cookers.

The first burner I tried had to many btu's,15,000 BTU , I just purchased a 5000 btu from walmart. Just need to find my propane hose that will convert from small propane tanks to the large tank. I know I at least had one at one time but I sure can't find it.

I think I will have better luck with the smaller burner. The larger burner might work well for winter time smokeing when it gets into the single digits.

I noticed that at least one of you is from the Des Moines area as well. Do you buy your spices from Todds Ltd?

Any chance you might consider changing over to electric heat ??

I use the electric element foe a Brinkman smoker/grill, along with a thermostat unit to control the power to the element. It makes it pretty easy to control the low temps in my smokehouse.

Dan......i JUST found out bout todd's last week, went there friday.......nice place, specially for bulk.........i haven't bought any there yet, but they do pack their own spices on site, there is a window as you enter, where you can see em werk

i have been buying my spices at penzy's on the westside........they seem a bit pricey.......but i havent done a comparrison yet on prices between the two
