Hello I just found the forum, wow so much information I wish I would have found this forum a few years ago.

I have been smoking using my Weber Smoky Mountain for a about 6 years.  I raise and butcher my own pigs, chicken and goats. I have mainly smoke pork and salmon. I have a smoke daddy that I use with a hot plate that is digitally controlled by a thermostat to do all my cold smoking. I am looking forward to learning from all of you and I might even be able contribute.

Hey neighbor.  There's a couple of us hiding up here in Whatcom County. And then there's a couple down in Snohomish, then there's Joe out on Whidbey, why, I guess you're just plain surrounded.  Yep, this is a friendly place with a lot of great ideas and we're looking forward to your ideas as well.

First off welcome to SMF. You'll like this place for there are alot of folks here that would just love to help you with just about anything to do with smoking meat. You will find alot of good recipes and techniques here also. so with all that said:

3 Days?? Aw Pishtaw.  Rain ain't nothin'.  I've learned to take steps to insure that I can smoke any darn day I want.  I've created a shelter about 22 feet long and 16 feet wide, built out of 3/4" conduit and heavy tarps with a decent slope.  It's sheltered from the winds.  Roof Ends are also anchored to building structure.  Vertical poles are anchored in concrete blocks.  When winter comes, I add 4x4's reaching from the deck to the peaks to handle the snow.  One of these years I might even add a real roof over the area, but.....I got a lot of things doing.....It's tough being retired.....too many distractions.  This works just fine.  When I go out on the road with my travel trailer, my WSM goes with me, of course.  Through up a 10x10 canopy with extra sections of tarp to wind block the sides, hey we're cooking now.  When I was on the job, we called these hooches.  When I was a member of Uncle Sam's Camping Program (deployed to the field, we called these shelters).  Adaptation is the name of the game.

Hey I m one of the newbies down in sno-co. Im wondering do you sell your hogs? Id like to get a few lbs of raised hog in the freezer. use to buy lamb from my oms neighbor but he passed away and now i lost my lamb supplier. Welcome to the boards. And as far as only 3 days to smoke out here in the PNW I got to say its really easy to cold smoke out here lol. But I smoke grill bbq year round in pouring sun or the nasty white stuff.....
