I've been smoking meats for about 3 years now.  I used a bradley electric smoker but have had to replace several items on it because they are not that well made.  Most consumer units are not that well built.  After the unit burning up, electrical issues, I decided to build my own using a warmer/proofer cabinet.  I'm located in Wilmington Il. south of the Mistake by the lake Chicago.  Hope to learn a lot here and share some experiences.  I sometimes hunt wild game but at 65 I don't do near as much as I used to.  It's not safe to hunt without a partner especially in my age class.  I enjoy making Jerky, smoking briskets, ribs, et al and look forward to expanding to making my own bacon, smoked cheese's etc. Thanks for having me on your site.
