Hi all, I'm in northwestern lower Michigan and am building a smoker from an old metal freezer.  I've a got a little experience smoking fish and other meats, but never really owned a smoker except for a Little Chief that died soon after I got it.  I worked in a BBQ place for a few summers down south that my dad ran for 11 years so I've got some secondhand knowledge.  Right now, I'm trying to figure out what size hot plate I'll need to maintain around 250°F for a few hours to get some baby backs done.  I'm hoping I can get away with something that won't draw enough amps to require a re-wire.  I wouldn't mind replacing a breaker as long as the house wiring could take it.  Thanks for having me and I look forward to a great time!
