hello, my name is sam, and i am new and excited to finally join the ranks of meat smokers on this forum :) i have never done any kind of smoking, but always wanted to, but now that i have a charcoal grill, i feel like i can finally get started.

however, since i am starting on a tight budget, i am using an inexpensive kettle grill. i have not used it yet since i got it earlier today, but am itching to try it out on some fish i have in my freezer, namely yellowtail snapper and kingfish. 

i am currently living in south florida, but i am from tennessee.

Welcome, from southern Ohio, to the best forum on the internet if you are looking to learn how to BBQ/smoke/brine/cure/inject. Well you get the picture if you can do it to to something you put on a plate to eat then someone here has probably done it. Use the search bar at the top of the page and you will be led to the answer to most every question you can think of. If you don't find the answer there then just post it and someone will chime in with there opinion on the subject.

Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions
Post it and you will probably get 10 replies with 11 different answers. That is
because their are so many different ways to make great Q...

Everyone needs a kettle.

well, i have a few developments that have happened since i created this thread. one of which is that the first grill i got was a cheap piece of junk that was damaged right out of the box. so, to make it up to myself, i saved up to get my very first Weber grill, and im loving every moment of it. in fact, i used it earlier today to smoke some kingfish and salmon. the kingfish was perfect, but the salmon was mediocre.
