Hi everyone. I've been browsing these forums for a couple of weeks and just got around to signing up. Figured I would stop in here first before going and posting elsewhere. I've been smoking on a cheap offset for a couple of years (terrible at keeping temp but works good with a lot of attention). Got into smoking when I got this one really cheap on closeout where I work. I have smoked many different types of meat but nothing like a brisket where the temp must stay steady for a long time. That's about it for my background in smoking. I hope to learn a lot from you more experienced guys.
