Hello, everybody

  1. My name is Edward, I bought my wife a new smoker for Christmas, (she said she wanted to try it) so I started looking, and I fell in love with the Oklahoma Joes t Lowe's. Since I am originally from Oklahoma, (Claremore) the Oklahoma caught my eye. Once I started really looking at it, I could not believe the heavy gauge steel it was made from. I asked if the smoker came in a smaller size, and the associate was kind enough to do some research for me, and we found that Walmart carries the highland smoker from OK Joe, and it was in stock! So after three of us lifted it i to the back of my truck, and I got it home, I was even more amazed at the quality of this BEAST.
    Let me stop here and say I am new to smoking, this is my first smoker ever, and I was comparing the quality of this smoker, to all the gas grills I have used in the past 25+ years. Thin cheap metal that rusts in a few years even with proper care.
    I was concerned about the all steel construction, and it rusting faster since it is outside in the elements 27-7. So after a long conversation with the Lowe's rep, I bought a high quality cover, and an extra gallon of vegetable oil.
    Now I am a child of the 80's which is to say my development years were during the 80's where mom and dad had me grilling over charcoal on the grill we picked up at the local curb alert. After I started paying for grills I switched to gas for the convince and never looked back till now.
    Like I sad I bought this for my wife (who does the cooking) but after the first run, she stated "you can have that!" I have fallen back in love with outdoor grilling and the offset fire box appeases the pyromaniac within.

    So I have the Oklahoma Joes highland smoker, and I am about to do a few mods on it, seal the leaks, exten the smoke stack inside the cooking chamber, makeshift convection plates.
    I love it and have no complaints about it at all

    Any advice is appreciated and welcomed

  4. Question about hardwoods. I live in FL and all the rage here is Black Jack Oak. I grew up in Oklahoma, and everybody talked about hickory,or misquete for grilling or smoking good Q, so I went down to the local hardware store and bought 20 pieces for $10.00. ( yes there is a racket for firewood here in FL. Anyway, after kicking my self for several days, I realized i have 13 acres of "backyard oak" at my disposal. It's not blackjack, it is mainly water oak, and laurel oak, does anyone have any reason NOT to use this?
  5. Glad you joined the group. The search bar at the top of any page is your best friend.
    About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
    and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
    We are all smoke junkies here and we have to get our fix. If you have questions
    Post it and you will probably get 10 replies with 11 different answers. That is
    because their are so many different ways to make great Q...

    As I said in your other post. Yes it will work just fine. Make sure you season it first the

    smoke away.

    Welcome to the forum Edward. There is a lot of good information here and if you do not see something just ask and someone (or many someones) will give you their suggestions.

    I also have the OK Joe smoker (however a much older model) and love it.

    Edward missed this post so Welcome I like the looks of them ribs.

    Laurel is poisoning unless it is culinary Laurel ( Bay Leaves) I would avoid using that. I would think Mesquite would be readily available.
