I am retired and lucky enough to be able to leave when Delaware temps get cold. During those months, I stay with friends in Panama. I am not Hispanic, so I have to learn Spanish. It's improving - a little.

I've been grilling for years, but smoking is new to me. I need to learn all that I can. Reading this site, I see that many prefer pellets or sawdust. I would prefer to use wood chips because they are less expensive and not commonly found in Panama. Even in Delaware, Lowes and Home Depot don't carry any pellets larger than the 8 oz. samplers. We don't have anywhere else here in rural Delaware.

In Delaware, I have a Masterbuilt electric smoker which I purchased. In Panama, I have a homemade rig made from two old Weber type barell smokers and a portable one burner propane hotplate. It's butt ugly, but it works. Any bad food has me to blame. I am also attempting to create a cold smoker from a few leftover parts from the barell smokers. Haven't actually done it yet. Any advice would help.
 
Welcome...many here will use a smoke generator of some sort like the AMNS to cold smoke cheese. I've seen a big cardboard box used as a smoker for cheese with a few holes punched in the top for escaping smoke. Type in cold smoking in the search bar for ideas and others set-ups.....Willie
 
Welcome from East Texas, sounds like fun to me. I'm not a cold smoker but there are a lot of members that are. I sure someone will be gald to help. Put up some pictures of your smoker. No such thing as ugly smoker if its turning out good food.
