I've been lurking and reading or a week or so now, figured I probably better start an account and become active.

I'm the household cook and a constant tinkerer. Grill, smoker, oven or stove there isn't much I can't cook, but a lot I choose not to cook.

I added a smoke box and rotisserie to my gas grill years ago and they're both pretty great for adding smoke to grilled food, but that's not the same as smoking. My buddy brought his MES40 over after deer season and we smoked some snack sticks and venison sausage fatties that were pretty great. I've been kidnapping his smoker for the past month. Every time he comes to get it there's smoke rolling and I'm saying "well, might as well stay for dinner..." haha.

So I need to get my own smoker. I've been researching and reading on here, and what I'm coming up with is there just isn't a production model from any manufacturer for any price that does what I want. While I "can" fab pretty good, I really don't want to build a smoker from the ground up. I'll start a different post before I dive into all that tho. Back to work for now.

Your right it's hard to find 1 smoker that does it all.

That's why a lot of us have more than 1 smoker.

I have 5.
