Hi everyone!

I have a stainless steel over/under double door freezer I have converted into a smoker. I've been using a Weber smoky joe for a heat source with works great..almost! No problem getting it up to temp but maintaining a temp without it running away has been quite the challenge.



Im going to change over to electric and was wondering about using a hot plate but have a couple of questions.

How big? I'm wondering if a single 1100 watt will generate enough heat or do I need a double burner?

I am going to use the old fan furnace temp sensor to regulate it. On at 150 off at 180.

The smoker is about 5ftx2ftx2ft.
