Hello smokers! My name is Ryan, I live in Fort Worth, TX and got my first smoker a Webber Smokey Mountain around January and decided I might like some help from time to time so here I am. Hoping to learn a lot from some of the more experienced folks around here. Have a brisket point on right now...only 4.5 lbs, its been smoking at 230 for about 4 1/2 hours now, hit the stall around an hour ago and wrapped it in foil. We'll see how she turns out...this is my second attempt at brisket, last was a flat with good flavor just not as tender and juicy as I would have liked. So far ribs, pork loins, and chicken have been my go to's hoping for a great tasting brisket with better tenderness this time. Always had a lot of success on the grill, smoking is a whole new ball game!
 
Ryan, welcome to SMF!  You have a great smoker there (I'm not impartial) and sounds like you've been putting it through it's paces.  Brisket can be a bit of a challenge, but patience is rewarded.  Keep us posted how it turns out.  We love pictures, also known around here as Q-view.
