Been on this site for around 5 years now as mainly a lurker. Over the last year we had a bunch of changes in our life so I was unable to get much smoking in at all. We bought a house last fall and after working on it for the last few months have it mostly up to par and am now working on the outside. With outside stuff being done I plan to smoke a ton of meats and well anything I can fit in my smoker that day. My boy just turned two so am excited to get him involved as much as I can in my adventures of the smoked kind.

I posted last week about a healthy rub for a person and after much searching just gave up on that. Ended up making smoked fajitas due to 3 people wanting steak, 2 wanted chicken, and one was only able to eat ground meat. Was quite a day to make three types but the brine I use is low sodium and sugar already so worked out well. I can post the recipe for them if anyone is interested but was unable to get any pics. I am doing spare ribs this weekend and will make sure to get pics. Gonna be outside building fence and getting my vegetable garden ready so seems like the best opportunity to take advantage of 80 degree weather.

Well I hope to post more on here and get to know all the people I have yet to meet. Hopefully some of the people I remember are still hiding around the corners.

Hey Joe, glad you'r back. Maybe after the fence building and garden planting you will have time to relax and smoke.

Steak Fajitas turned out great by the way. Wife loved the chicken. Hope to see you guys again before winter and do it again. Good luck on the dog run.
