Heat Drop

  1. After smoking my chicken breasts tonight the temp dropped to slightly less than 200. The vents and chimney were both fully opened. What can I do to raise the temp. back to 225-230?

    My best advice would be to search "Brinkman Offset Smoker Mods", and checkout the different things that others have done to their Brinkman smokers to help them create, distribute and retain heat.

    Did you try adding more lit charcoal?

    When you noticed that the temp was dropping. If I am cooking with charcoal I like to have a chimney full of charcoal ready to light so I don't get caught off guard when the cooking temp starts to drop.

    Huh, I just toss more un-lit on to the coals. No need to pre-light

    Yes there is a very good reason to add lit coals, you will get back up to proper cooking much faster temp faster.

    If you have a dying fire adding unlit coals will take longer to light and get the pit back up to cooking temp in my experience.
