Healthy Tuna Steaks

    After a doctors visit which you can read here:  

    I needed to eat better so tonights dinner is big ole tuna steaks!! I first made a sauce for the fish of

    water,crushed raspberries,small diced habanero peppers,garlic powder,black powder and some splenda.

    cooked it up a bit then cooled it and put some on the tuna while the mes was coming up to temp.


    Put them in the smoker when the mes hit 235,along with one row of peach dust in the amazen.

    Here they are at a IT of 85.Time to put some more sauce on,and a quick pic.


    Man these things cook fast!!! One hour and we're at a IT of 122 so its time to pull them off.


    Here's my plate with some sauted broccoli in low sodium soysauce.

    Dinner is served!!


    Cooked perfect!!! nice and moist,tuna cooks fast and is very easy to overcook,so i was happy with how these turned out.

    And a close up, just cause i like too!!


    Good healthy eats!!!! just what the doctor ordered....really!!!

    I will try this again for sure! Tomorrows nights dinner is gonna be chicken with a pineapple rum sauce!

    Nice looking tuna! If you want to jazz up the broccoli a tad heat some sesame oil in a saute pan, toss in the broccoli, let it cook for a few minutes on med-high. Then put a little of that sweet chili sauce (not a lot, just about 2 table spoons), couple of dashes of soy sauce, and if you want a little kick some sirracha chili sauce. There is some sugar in the sweet chili sauce, but you don't need to use very much of it at all.

    That sounds like a great idea!!! I might try that for saturdays dinner! I have all of those in my kitchen anyhow!!! THANKS,
