Hello all,

I recently got myself a Masterbuilt 30" digital electric smoker on Black Friday and I've already whipped up some venison jerky and it came out great.  I've been scouring the internet for recipes and techniques on smoking, and it couldn't come at a better time seeing as how I bagged a buck two weekends ago and got plenty of venison to work with.

I work with a lot of wild game because I have a Red-tailed hawk named Freyja who catches it for me.  I got a bunch of game building up in my freezers and I figured if I smoked some it would help me clear out my freezer a bit.  I'm looking forward to making some summer sausage and snack sticks soon and hopefully I'll learn some good techniques here and be able to share what I've done myself.

 
Welcome to the site.  Do you trap your hawks yourself?  I had a good friend years ago who did that.  I never got the chance to go with him but did help him collect pigeons for his bait.  It's a fascinating hobby in it's self.

You've found a great site for finding smoke project inspiration and helpful folks.
 
Yep, all three of my hawks I've had were trapped. I wouldn't call it a hobby it's more of an insane passion. You can't hang a hawk up like a gun or put it away like a smoker. They need attention every day. My current female Freyja's caught 9 squirrels and 2 rabbits. Hope to get her going on pheasant and duck as well.

Yea;  I remember that it seemed more of a lifestyle with my bud Rod, too.

Sounds like Freyja's a pretty good "grocery getter".
 
She's one of the best grocery getters out there, no lead in my food and if I can trade her off of it in time I can usually get it all intact, sometimes minus a leg.  Last year she put 8 squirrels, 6 rabbits, and 1 red squirrel in the bag.  I think she's set to blow past that this year.  Will release her this spring as long as she doesn't get bit like she did last year.
 
It's got to be a thrill to watch her hunt, stoop, and catch.  I hadn't given falconry much thought in years till you woke me up.

Did a quick google and found this just a couple hours west of me.
