Easter is usually ham time but his year we had something different. It wasn't a formal deal with all the family coming by so we laid low and smoked a Hawaiian Meatloaf. This was something I came up with first thing in the morning and thought it would be worth a try. My wife likes pineapple so it was a big hit with her and the kids as well.

1 lbs. maple sausage
2 lbs. ground beef
3 strips thick sliced bacon
1 can Dole pineapple rings
1/8 cup Yoshida's
2 tsp sun dried tomato & garlic pesto seasoning
McCormick's Sweet and Smokey Rub
1 cup Mexican blend shredded cheese
Garlic powder
Brown sugar
BBQ sauce
1 egg

Thanks Caveman...

I used Traeger Mesquite pellets. Next time I'm going to try a mix of 50/50 Maple & Hickory pellets.

We had some left over but it went for breakfast. I should have done two. When I experiment with things I tend to make smaller amounts in the event it ends up in the dogs bowl. The dogs seem to love everything that comes off the grill no matter what.

That really looks good and tasty. I googled the sundries tomato and garlic pesto seasoning, but was unable to find anything about it. Is this something you make or is it store bought. Please enlighten the Grasshopper.

I browned the bacon in a Skillet and then mixed it in with the meat and pineapple.

I will check on the Sundred tomato & garlic pesto mix wehn I get home. I'll post the Brand name this evening. It's a pretty good seasoning.

Now that looks and sounds really good and I will put it into the recipe book and give it a try pretty soon. Thanks alot.

Will have to try this. Haven't cooked a meat loaf in the oven in four years.
All thanks to this site. Looks very good.

I finally got around to publishing the video on this smoke. For those who wish to watch the Hawaiian meatloaf in the making the video is at the top and right here as well.
