Hawaiian Fatty

    I was bored and wanted to do something different with my fatty.  So I thought up this hmmm, Hawaiian Fatty thing.  I remember watching some Hawaiian cookin on tv one time and they used banana leaves on whatever they were cookin.  Living in Ohio, we don't have too many, if any, banana trees growing here. So I googled this and found a recipe that says that if you don't have a banana leaf to use banana peel . So with that, here's my Hawaiian Fatty.

    Here is two pounds of sausage with pineapple mixed in.

    I didn't do a full bacon weave because I wanted the flavor of the toppings to go more into the fatty.

    Here it is in the smoker with banana peel and more pineapple on top. I will submit the final product after it is done. If I don't submit anything, then you will know that I have been rushed to the hospital to have my stomach pumped.

    Can't wait to see the finished product, unless you get your stomach pumped.  Then you can just skip it.

    I just ran into a stall. I have 5 degrees to go and it stopped. Oh well, it happens. Just have to sit it out. Ugh...

    Ray, your Hawaiian fatty sounds good, but I seriously doubt the banana peels will do much of any thing, you need to have made a weave out of them like we do with bacon, but that would take a lot of bananas, ...burp!

    The principle with the banana leaf wrap is to impart the moisture from the leaves into the meat your cooking, when the cook is finished the leaves are dry and brittle.  However, you might find some in the Oriental section of your supermarket or maybe on line, the results are fantastic, I'd send you some but they probably wouldn't make it through the Ag inspection.

    Well gang, here it is. But, I will have to agree with Gene on the banana peels. There should've been more. Next time I may add a little more, not much, pineapple. Other than that, I got the supreme approval of the wife. She thought it was fantastic.  Here's the finished product:

    That looks awesome, congrats on the new idea!

    Looks like the banana peels were pretty dry, was the meat under them very moist?

    Next time you might try wrapping a whole fish, but I can't imagine eating that many bananas, maybe make some banana bread?

    Anyway, my wife likes pineapple with everything/anything so this is on the to do list.

    Justpassingthru hit it on the head.  I need to design a way to do the bacon weave with banana peels.  No jokin.  What very little bit of flavor the banana peel did leave needs to be accented a lot. Thinkin about it, when the banana leaf is used, it is wrapped completely around the food being cooked.

    So with all said, the changes would be maybe use a 1/3 of a cup of pineapple pieces to 2 pound chub instead of 1/4, put ring slices of pineapple on top of the chub and wrap the whole thing with banana peel. Don't do a full bacon weave, space the bacon so flavor from the pineapple and banana peels reach the sausage.

    Oh yea, I didn't eat the banana peel. And another thing, the sausage was just standard sausage nothin fancy.

    Good creative fattie Ray!  They have banana leaves in the frozen food section of some of the grocery stores in my area.  You might check that out.

    Hmmm.  If you have it up there, then I would think that somewhere down here would have it. What are we, bout 50 miles apart? 

    If I can't find it, I'll have my son check out some grocers up in N. Canton and see if he can find some.

    Yes Ray that is the first hawaiian fattie that I have ever seen. Some we could probably call it the HawaiRAYian Fattie. It has a nice ring to it don't it you think. I bet the peels would make a good addition to a salad or something. Great Job and that is really out of the box for sure.

    mmmmm [​IMG] that looks good! I've just recently gotten into fatties myself, but we've only done cheddar and bbq rub in the middle... you've give me some ideas!

    That looked real good! I bet those mushrooms were tasty with a little of that sausage grease.mmhmmmm.
