Having trouble with temps

    I just bought a Landmann 3495 double drawer gas smoker. I am having a lot of issues holding temps in my target range. Today, it is 45 outside and I am trying to hold 225 to 260. The slighest change in the gas control shoots it up over 280 and the slighest turn down drops to 200. Any ideas how to modify the smoker to make the temp easier to control?

    Well sorry to hear of the troubles. I aint a temp gauge watcher so I would get it in the ball park and forget about..go have a toddy for a while etc. Get to 260 and stop fiddling with it..lol. Why anybody would need to get higher than that in a smoker I aint sure. Now would crank it up to high for proper cooking of barnyard avians but thats about it. When you lay your hand on it and cant hold it but for two Mississippies..its time to grill steaks..lol. Is you close to the Big Thicket?

    Hello merrymanb and welcome to the SMF family!  It sounds like you might consider a needle valve mod.  There have been many members here who have made this mod to their gassers, so there is no shortage on information and threads dedicated to it.  You can probably browse through the propane smoker section and find lots of them.  The link below might get you started...its a good article about needle valves:
