Hello all..

I'm going to be having a party in 3 weeks and I already have two butts smoked, pulled and in the freezer.  I am thinking about doing one or two more (kinda ate one of them over the weekend lol).  I also want to try doing some chickens. I just got a double beer can chicken rack and thought about doing some beer can chicken.  Are you guys brining beer can chickens first?  I was also thinking about doing 3 or 4 chickens and pulling the meat off and freezing it for the party.  Anyone have experience?  Does smoked chicken freeze and reheat as well as pork?  Any suggestions on reheating?

Any answers/help would be greatly appreciated.
 
I've pulled / frozen chicken before. it works pretty good. it works best if its brined and you dont over cook it. Re-heat in juice / water / sauce is best, and not too hot or hard, or it'll get over cooked.

Since chicken cooks fast you could do those the day of too, and re-heat everything else.
 
If your not trying to reheat the skin I find chicken comes out very well reheated. We usually steam ours to reheat using a rice steamer.
 
Whenever I smoke chickens, I cook some extras.  I split them in half, and vac seal them.  Then, when I get ready to heat them up, I just drop the bags in boiling water.  The skin is shot, but the meat is as juicy and tasty as ever.
