Have tons of cayenne peppers (update 9-23-13)

    Question tho?  I have a ton of these and the plants have fallen over from the weight of the peppers, so I had to pick them today or loose them all. Most are green and I was leaving them to turn red on the plants.  Didn't happen.  Now....how do I dehydrate them?  I searched here and saw several on strings...and I have never done that before.  I also have a dehydrator.

    So I am asking for some guidance here.  I would like to use some for Vinegar pepper sauce...and the other to make my own cayenne for rubs.


    I have another bag full of the cayennes from this past week too.

    This picture was from what I picked today.  Maters, green beans and cayennes.

     I just dehydrate them Then grind. As for the pepper sauce Just add vinegar. They will bleach out in the vinegar so the red will not stat red.

    Thanks David....I have made that pepper sauce for years and years....just like my Mama did.  Wanted to try something different since I have a TON of them.  How long does it usually take for the dehydrator? I know the brands are different...just wondering a ball park time.

    I have never made pepper sauce but like David I just dry them (in my oven, makes the house smell good) and then I grind into a powder.Great to have to sprinkle on eggs and such.

    You are lucky to have so many. I think I got about a dozen Cayenne peppers this year from 3 plants.

  7. I've never timed it But it takes a long time 20 hours or so. i dry them whole. if you were to slice them in half it would speed things up If you do slice them. Remember to wash your hands a couple of houndred times before you go to the rest room!!!!! or[​IMG]

  8. This is my dehydrator. I have never used that many racks with peppers.

    I have one that is similar....and jeeze that is a tall stack!

    AND....oh yes....had a good friend's hubby not listen to her about Hab's and to wash his hands before going to the john.  Saw a photo of him standing in their pool...clenching his hands and face in pain.  LOL

    Wearing food grade gloves can prevent alot of problems like that. :biggrin:

    Kat make a batch of my Acid Rain!! It's sooo good! I can't post the link Fromm phone, so just search for acid rain. I sun dry most my peppers. Use a needle and thread them through the stems onto thread and hang. Looks like I'm going to have a great batch of Thai chiles this year, yay!!!

    Okay....pulled out the dehydrator and plugged it up last nite.  I have 3+ pounds of those bad boys...we will see how this turns out.


    Here they are....and a few have a little bit of red on them.  The plants have started standing up again...so I may even get more.....blooms all over the plants.


    We shall see what happens!!

    David....my peppers have loved this weather this year.  Even my jalaps have some serious heat this year.

    All of my peppers have done better than years past. I have ABT's several times a week. Then pickling peppers. My mators have been getting to much water and splitting.

  19. Just saw this Kat - nice bounty of peppers!  [​IMG]   I have dried thousands & thousands of peppers & I have found in my case that I get a lot more even drying if I slice them in half first. It speeds up the drying considerably too. I also knock the tops off a few bags of them & freeze them whole - they work great for grilling/cooking during winter when there are no fresh peppers available  [​IMG]

    All my peps are awesome EXCEPT 1 plant rotted off at the ground....  I s'pose I planted it too deep...  [​IMG]
