As stated above you would need to take the bird to an IT of 165 in the thigh or breast. Not sure how the final bird would turn out. I'd maybe try this with some chicken thighs first so you don't waste a whole bird.
We do a lot of smo fried wings and leg 1/4s. If i was going to do a turkey it would be just like those straight off the smoker into the fryer, We smoke till the internal temp says done then just into the hot oil to crisp the skin.
You could smoke till done then refrigerate over night .But i am really afraid that you would burn the out side before the internals are up to temp.
I am not photog on OFG. (Blue whisper was asking) So I brined the turkey for 30 hours. Injected the whole turkey (lots_) just so it doesn't dry out. Smoked it till 160 internal. Wrapped it in aluminum foil and put in fridge.Plan on tomorrow (easter) to fry it in oil-less fryer for 1-2 hours. Depending on looks? Or internal temp. I'll find out tomorrow. I'll let you know. Thx
Just to let u know. It was amazing! My kids would eat it every night. And me omg! I had night mares last night of
Christmas vacation with Chevy chase of turkey deflating. But noooooo_! Smoked till 160 degree. Wrapped it in tin foil put in fridge. Then pulled it out __45 min. Put in oil less deep fryer for 1 1/2 hours. I think if you inject a lot like I did. Its perfect!!!!!!! Thumbs up from 6 kids!
