Hard core cold smoking

    I planned for some bake beans this weekend and got nothing in the freezer. So I went to my favourite smoked meats store to pick up some "bones".

    Of course I ended up getting a lot more...like a kid in a candy store.

    Old school smoked meats, with old school methods (you guessed - no cures)

    Their take on smoked coppa

    Smoked pork sausage with paprika

    And the bones

    Other lip smacking no-smoke goodies

    Steamed paprika bacon (bacon term use is loosely used here - it's mostly fat)

    Fried bacon chips (again...fat mainly)

    All these were hung on overhead hooks in the store. Talk about shelf stable.

    Made a delicious appetizer plate with horseradish and mustard.

    Man that ls starting to look good, looks like it will be a big pot of beans, I'm in on this one. [​IMG]  

    A full smoker is a happy smoker.

    I WANT that sausage! :D Can you give me the address of the store, I'm just 3 hours driving away from Toronto :)
