I planned for some bake beans this weekend and got nothing in the freezer. So I went to my favourite smoked meats store to pick up some "bones". Of course I ended up getting a lot more...like a kid in a candy store. Old school smoked meats, with old school methods (you guessed - no cures) Their take on smoked coppa Smoked pork sausage with paprika And the bones Other lip smacking no-smoke goodies Steamed paprika bacon (bacon term use is loosely used here - it's mostly fat) Fried bacon chips (again...fat mainly) All these were hung on overhead hooks in the store. Talk about shelf stable. Made a delicious appetizer plate with horseradish and mustard.
