Just purchased a Masterbuilt Electric & been looking around here gathering lots of GOOD information. This forum is unbelievable!

Have a lot of deer, ducks & tuna in the freezer just begging to be smoked. I'll keep searching this forum for great ideas & may have a few newbie questions.

Welcome De'Gumbo, What a coincidence I just made gumbo a couple days ago with some polish sausage I made, then smoked with apple wood and chicken thighs. It was a pre-packaged base my sister sent me from waveland Mississippi. It was great. I always wanted to have a cajun food party. I found a great place to order crawdads from lacrawdad.com, They come delivered the next day live for a real reasonable price. Until you read that per person is like 5 lbs. of the mud bugs, then it adds up. Glad to have you and pick your brain on some of your local cusine.
 
I would like to thank everyone for the warm welcome. Have not been able to use the smoker much yet, only on some deer sausage which came out pretty good. Now that hunting season is just about over & Mardi Gras has passed I should get to do some cooking.
