starting the smoke


This is what i like the most about this setup... I lifted the charcoal basket up to searing/grilling level and flame seared the burgers.


Time to top the burgers with the chili's and onions


..now melt the Mexican cheese over everything


These are my Reverse Sear Mexican Style Burgers!   First i smoked them (from frozen) ha ha....@ 250 for a couple of hours along w/ diced chilis and chippolet onions in some chili infused olive oil and butter. I then seared the burgers topped w/ the chili's and onions then added Mexican cheese.   On Cinco de Mayo it's a must to wash the burgers down w/ some genuine Mexican tequilla and an cold Ale!

Looks great, FWI!  Love the Cinco do Mayo themed cook!  I've got a couple ribeyes resting in the fridge that are gonna get a reverse sear in about an hour...

Like Red, I got a couple Ribeyes for tonight too, but I'm just gonna throw them on my Weber "Q".

Red i'd help you out with those steaks but i'm stuffed full after the burgers and left over ribs..lol

David, loving the UDS...can't say enough about the adjustable charcoal basket level, All UDS should be made this way....so versatile, you still have your cool zone around the outside of the cooking grate.

LOL...i had a plan and stuck with it.   Now i just have to finish the shelves.    Getting the Q going took priority!
