Hanging summer sausages

  1. How long should i hang summer sausages before smoking. Currently hanging in cold smoker outside. Currently at 40 degs.

    Al least 24 hours up to 3 days, but I'm no sausage guru.

    If you mixed your spices and cure and then stuffed right away, hang them overnight. If you mixed the meat and spices and cure and let it sit overnight there is no need to hang prior to smoking.
