Have a nice load of hand rolled beef sticks and a few venison hot sticks on the smoker this morning. Also a couple summer sausage and a batch of beef jerky. This will probably be my last smoke for a bit as deer season opens here in NY next weekend. I hand rolled my sticks because I don't have a jerky gun. Wal-Mart has stopped carrying them here in the store and I really don't like buying online. I like to hold it in my hands and check it out before buying it and I don't like waiting when I want something..lol

The darker sticks are venison and the lighter ones are beef sticks made with 80/20. The summer sausage is the remaining venison and beef mixed together.the venison is some hot sausage i had made awhile back and they made it unbearably hot. I've been using it in chilli. I figured in small batches it might work in sticks. Then mixing it with the beef I could make it bearable in as. The jerky is my usual receipe and a hit every time I make it. I had one of my apple trees die And it was nicely seasoned. I usually use hickory and mesquite but this time I'm trying straight apple and its smelling awesome. I'm not sure if different apple trees make different flavors thus was a gone wild yellow delicious. Does anyone have a preference when it comes to apple wood ?
 
If you don’t want to buy online check and see if your local hardware store carries refillable call tubes. If so buy a few of those and a caulk gun.

I have the LEM jerky cannon and it works good. Cabelas is the same.

I love apple wood,use it more than anything else.
 
Smoked them all and now in the oven at 170°.now we will see how long to hit temp. It was under 30° and my homemade smoker don't hold heat. Sorta like a cold smoker when there isn't a flame in this weather. But its still a build still working out the bugs. Works great in the summer and fall.
 
Wow what a difference apple wood makes. I used same jerky recipe and with apple smoke it is a sweet jerky. Can't wait to try the summer sausage when its done. I usually have more of a savory flavor with the hickory and misquote smoke.

Yep like it alot. Quite amazed how much difference just changing wood totally changes a receipe.
 
I still have sugar maple and cherry I can try. I don't have pear on my property. Is black walnut a good meat smoking wood? I'm new and have tried only 3 woods so far. As far as misquote or hickory I use prebagged chips but apple was Fresh off my own land. Opinion fresh..seasoned wood to store bought wood chips. Which is prefered?

Walnut can get bitter real quick,gotta go real light with it.I shy away from it.I like to "know" the wood -great tasting apples come from a tree that has good smoking wood etc.But I use Western brand bagged woods for ones I can't source locally or on my land.Definitely season your own cut wood.I like to cut about 3-4" thick then split into chunks to yield 1"x 3-4" pieces for my smokers. The more consistent the size the better. I sent you a PM with a good smoking wood chart.

Thank you for the listing. I'm quite surprised by some on there. Lilac and corn cob..never heard of it but may try it someday. I Tried my meat sticks and ss. Well beef meat sticks are chewy but good.the venison is really salty glad I didn't make that many. The summer sausage was a mix of beef and venison. It was a little salty but delicious. Especially with cheese and crackers.
 
Yeah man,I printed that list a long time ago and still use it when I'm thinking outside the box.It's the best or most complete I have found.Some people even smoke with tea!

MC you come from a great apple area check out the local orchards and pick up their trimmings they trim every year.

Apple is my most used wood personalty I don't like mesquite to me it's way over barring in my book and strong oak is my next choice. At the PA gathering they used pecan and it was nice flavor and mild. My $.02

HAH! It's funny you say that.I responded to a post the other day on that subject.I'm smoking chicken right now with pecan.
