Given another shot at jerky. Last time I cooked it.. now ill try to dry it ;) using my propane smoker. . With mesquite chunks.. hi mountain seasoning and cure.
Cured 5lbs venison Thurs overnight in fridge
Came home Friday and loaded the Jerky Gun.
Got three full trays.. (still looking for the third ..cant find it so I made one) resting friday night in fridge... I had to use the beer to make it all fit... ;)
My smoker wont get below 200* even at 6am in TX its already hot out.. have to keep door propped. .but I did an hour at 110* with no smoke.. and im 4 hours in now..ttying to keep temps around 125-135* with door open.
They are starting to turn pretty...
