Ground Meat Jerky Question

Want to make some ground venison jerky in my smoker. I don't have any suitable racks for that type of jerky. Do you think if I placed the jerky on parchment paper on the racks if that'd work ok? Thanks.
 
I bought some amazen smoker mats or whatever they're called and they work great for gound meat snack sticks . They clean up really easy also . I wouldn't think it would work very good on parchment paper . I've seen some aluminum mesh type things , I think they're called grill toppers ??? they're like $5 for 3 of them but this time of year ( depending on where you're at ) they may be hard to find . I have some of those but it's about impossible to clean them . I think they're meant to be disposed of after one use .
 
I usually lay my ground jerky straps angled at a 45 degree to the direction of the grate. If you put the jerky in the freezer for about 15 to 20 minutes prior to smoking, they'll keep from being too 'loose' and falling through. It might add a few minutes to an hour to your drying time
 
Frog mats  Expensive but nice. Super easy to remove your meat. For clean up, just plop in the dishwasher and call it done. Best to find a decent size on E-Bay and cut to fit...

Bill I have the 2 sizes of the jerky canon, that is all I use to make sausage,meat sticks,kielbasa. You will love it,just got my Q Mats from Todd

Looking forward to giving it a try. Have a freezer full of ground venison, and I want to take a break from the summer sausage. When I do make my next batch of summer sausage, I'll stuff the casing using the jerky cannon...saw a video on YouTube. Looks quicker than hand stuffing them!
 
If you got the big Canon it holds 1 1/2 lbs of meat.

My Jerky Cannon gets here on Tuesday. I have to wait to order the Q-MATZ until next payday. I will thaw some venison in preparation for jerky making next weekend. For my first try, I will go with a commercial cure/seasoning. I picked up some Pacific Mountain Farms Jerky Marinade and Cure, which according to instructions can be used for ground meat also. Anyone have experience with this brand? Thanks
