I'd seen people grill on the Weber Smokey Mountain, and since i dont currently have a charcoal grill, i figured I'd give it a shot. Pork chops were good! I'd just marinated them in some soy sauce/worchestershire and threw some hickory chips on the coals for a little smoke (which probably flavored me more than the meat).

The WSM worked pretty well as a grill, but I'm probably not going to stick with it as a long-term option. Reason being the grill is just kind of resting on this metal ring on the charcoal grate, and easily shifted around, making me paranoid I would just dump my food on the ground. Also the food grate is at convenient dog snatching height. Probably would work well for camping though, and should hold me over till I find a kettle on craigslist, or just buy one outright. Definitely having more fun with charcoal than I did with propane!

Set it up like normal . Remove the water pan . Grill away.

Guess I may have to try grilling like that - though i wonder if something like steaks might not get seared enough from that distance. Sounds pretty perfect for chicken though!

Grilling this way is great for burgers, dogs, etc, no flare ups. For anything that you want to put close to the coals for searing, just place the charcoal grate over the lower cooking grate and build your fire there. I did that for five years, works like a charm.

I grilled up some chicken breasts this way yesterday this way, basically a smokey oven - they were fantastic. Pretty quick too!

You can get a kettle for 99 bucks!  I've got a kettle and a WSM and love the combo!  I've never had a propane cooker, but I do love charcoal!
