Hi all,
I'm grilling ribs for the first time tomorrow. I have a 22" Weber kettle grill. I'm planning to smoke/grill the ribs. I bought a bunch of different accessories, but I was hoping to get some tips and tricks from you all to get some good tasting ribs. Any advice would be appreciated. Thanks!
 
For something different I really like to slice single bones off rub them wrap in bacon rub again. Rotisserie ribs are tasty if you have the Cajun bandit rotisserie ring setup that fits your kettle. Otherwise you'll have to setup a two zone fire coals on one side meat on the other. What accessories did you buy?

I bought a chimney starter, coal holder for the grill, a hinged grate, and a thermometer. I was thinking towards that two zone you described. I've seen some people have a water pan for added moisture? Should I do something like that? How long do back ribs usually take to grill?
 
Like a lot of folks I use the 3-2-1 method. cook indirect, at 250 or so. Put a nice dry rub on them and then cook 3 hours unwrapped, 2 hours wrapped in foil, and 1 hour unwrapped. Best to keep an eye on them  and consider the timeline as  flexible.

You can do a water pan if you want,but if you do skip it the next time to taste the difference for yourself. I only rotisserie ribs on my kettle otherwise there in a WSM. Time will vary like mentioned above especially depending on your heat.
