My wife wanted something a little lighter for dinner and she has been craving salmon (she is pregnant so the cravings are pretty serious). So we put a few pieces of salmon in a grill basket along with some squash and zuchini on skewers. Burned RO lump and a couple pecan chunks.

As things are cooking


Plated up- salmon, veggies, and some rice & beans

Everything looks great there wutang nice plating and those are some sweet vegi's. The only question is was that your beer? JK. Good job
 
Thanks everyone, the meal went over very well.

Yeah that was my plate and my beer. My wifes plate looked the same but it is gonna be a while before she can have a drink. More for me I guess.

Salmon is the only dish I feel confident enough to offer advice on.
I cook it in our regular Weber charcoal grill. I take a whole side of the fish and rub it with lemon pepper and little salt, on top of that I grind fresh dill and squeez some fresh lemon on it.

When I grill I make sure that I have much coal in the grill so it's really hot. Skinside down and leave the lid off for about 3-5min depending on the heat. After that I put the lid on and let it sit for 20 min.
It can be a little dificult to get the fish of the grid in one peace but if you are careful it is manageable. Strange thing is that while the skin it totally burnt the fish itself is not burnt at all. Just a lovely smoke taste!
Next time I will cook salmon that way I will take some pics!
