I removed backbone from chicken seasoned with turmeric garlic and pepper, smoked 2 1/2 hours the increased the heat to 350 for an hour it's as good as chicken gets.
 
Three and a half hour ? t'sa bit log isn't it ?

If I could figure out how to put photos on here I would , and know it wasn't to long it was perfect
 
Nice looking bird, that seasoning group almost sounds south Russian, Georgian, maybe Turkish - are you familiar with chicken tabaka?
