So I decided to do some grilling instead of smoking for a little change up.
What we have here is boneless chicken breast trimmed up all nice and neat, grill to a perfection @ 165° IT, while that was resting I made some Spanish rice up and some queso cheese sauce from scratch, added some diced tomatoes and some chili peppers into it at the end.
Made a bed out of the rice and laid the chicken breast on and smothered it with the queso cheese sauce, I have to say it turned out wonderful the flavors that everything gave off was so delicious.
