Grilled Boneless Chicken Breast, Smothered with Queso Cheese

So I decided to do some grilling instead of smoking for a little change up.

What we have here is boneless chicken breast trimmed up all nice and neat, grill to a perfection @ 165° IT, while that was resting I made some Spanish rice up and some queso cheese sauce from scratch, added some diced tomatoes and some chili peppers into it at the end.

Made a bed out of the rice and laid the chicken breast on and smothered it with the queso cheese sauce, I have to say it turned out wonderful the flavors that everything gave off was so delicious.
 
Thanks everyone, the queso cheese sauce is the kind you find in any of your local Mexican restaurants, I happen to find several different recipe versions online and picked the one I liked and made it adding some of my own twist to it.
