Grill Temps

I graphed out the temps from my Maverick ET-733 and the stock dial that came installed on my Lang. Look like the dials have  sweet spot but then it starts  going way off.  Further info to follow.

I admire you guys who can both do and understand this stuff but I don't know how to decipher what this graph is telling me. Please add some explanatory text because I'd like to know what you found.
 
Not exactly sure what I am seeing here.I can assume from the data that it looks like I am going to need to do some more research.  I "calibrated" my probes yesterday using boiling water and found that one probe is broken reads extremely high and the other is +4 off (I can live with that).  I conjure though that the dial thermometers (not "calibrated") may be more inaccurate at higher temps by how much the difference is from the digital probes the higher the temps are.  Keep an eye on this post I will keep it updated with more information.
